low cal banana bread

I was playing around with my favorite banana bread recipe and decided to try it with granular Splenda. The results were nothing short of amazing!

preheat oven to 350 degrees

in blender, blend together:

3 very ripe bananas
2 eggs
1/2 cup margarine
1 tsp vanilla
1/2 tsp ground cinnamon

in a large bowl, sift together:

2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup Granular Splenda

mix together the dry ingredients with the blended banana mixture, put in loaf pan and bake 45 mins to 1 hour (toothpick inserted in middle should come out clean) If desired you can mix in nuts (pecans, walnuts ) or simply put pecan /walnut halves on the very top after you fill the loaf pan.

alternately you can use this recipe to make cupcakes but depending on the size of the cupcake pan - you will have to watch the time - probably only about 1/2 an hour for the cupcakes.
