Well, I'm not a doctor, but alot of what you describe reminds me of what I went through myself. I was diagnosed type one at age 32. It happens. The change in his diet probably has nothing to do with it....his pancreas giving out probably has everything to do with it. If you don't trust your doctor, find another one!
