It sounds like he has reactive hypoglycemia.

I think you definitely should get a blood glucose monitor and keep an eye on his numbers before eating and 1 and 2 hours after. If the results are what you expected you don't have to monitor all the time, just make sure you keep an eye on it and notice any trends.
