Corn Muffins

Yikes. I have heard that cornmeal is a way delayed, extended absorption. Had a cornbread muffin with my chili last night at 630pm, bed at 930pm was 214. Checked myself at 3am when I check my daughter, (at 9hours later) I was 311!! No other changes, nothing out of the ordinary except that corn muffin! So ya think it really is a corn meal thing?
