Hi Cheryl,

Have you had your thyroid levels checked? I used to feel anxiety at the slightest thing (such as shopping in the store) until discovering a severe case of hyperthyroidism (Graves' Disease). Let your doctor know what you're feeling, and ask if it could potentially be the thyroid.

A sensitivity to aspartame is plausable (perhaps it's the phenylalanine?) , but Splenda (sucralose) is biologically inactive. It would be interesting to do a double-blind study with you to see if you can detect the Splenda. There's a brand of cola that uses Splenda that I prefer. Aspartame used to give me headaches, or so I thought, but then I discovered that pop that had been stored in high heat was the cause of the headaches (from a breakdown of the aspartame in high temperatures). Thank goodness, or I'd really be limited!

Frustration is probably a reason many of us are on this forum. It's important that we become the health leader on our team, and use the doctor(s) as a resource. Your limitation of 60 CHO per meal was probably given to you to make it easier for you to dose your insulin -- after all, if you eat the same, you can then get an idea of how insulin works, and then start eating and dosing as you feel fit.

You might check your library for a copy of "The Diabetes Solution" by Richard Bernstein. I don't subscribe to all of his principles, but you'll probably find some of his advice useful. I rarely recommend books, but it might be helpful.
