Stacey, this is an incredible thread. I was a sous-chef for years, but I'm a really terrible baker...and for me to attempt diabetic-friendly baking recipes was even more intimidating to me than regular baking.

Thank you, thank you, thank you for these recipes! I was craving muffins earlier today, I swear. Please post more!
