Take your insulin later and take less of it. Your muscles will be burning up glucose the moment it hits your system and will enhance the action of your insulin. Your current ratios won't apply.

I would bolus an hour after you start eating, maybe before you eat the tart. The potato will take a while to get into your system anyway and won't affect you until later. Also watch the wine - it's fine to drink but if you've been running it'll go to your head much more quickly and it'll also impair your liver's glucose output.

Best advice is not to worry too much if your BGs go a little high - it's not the end of the world so don't worry about matching carbs to insulin exactly.
