Sunshine Triscuit Chicken Salad

1 - 4 oz boneless chicken breast, grilled or baked w/1 tsp olive oil brushed on
1 stalk celery diced in medium chunks
½ apple peeled and diced
1 cup baby spinach leaves
2 tbsp fresh parsley
2 ½ tsp lemon juice (realemon is fine)
6 Triscuit crackers broken in big chunks
2 tbsp Light Hellmans mayo
Dash salt and pepper


Break Triscuit into nice bite size pieces and set aside.
Dress and swap the pounded out chicken breast with a mixture of 1 tbsp Olive Oil, parsley and 1 tsp of the lemon juice whisked together.
Grill or bake boneless, until done, when cooled off …dice it up in bite size chunks.

Combine, Chicken, celery and diced apple
Whisk ½ tsp lemon juice and mayo together
Add salt and pepper
Toss together the remaining tsp of lemon juice and 1 cup raw baby spinach
Lay it out nicely in a bed and top the spinach with the chicken salad.
Right before serving add half of the Triscuits and fold in.
Top the salad with the remaining Triscuit and lemon peel curl at serving time.
