| I'm an overweight T2, though I have been able to lose some since giving up bread, potatoes, pasta and the like. I eat a low-carb diet, lots of chicken, lean beef, salads, tuna, bunless burgers. I have a lot of insulin resistance, so it's very easy for me to gain weight.
Guess if you wanted to gain weight, you could up the portion size of what you usually eat, maybe supplement with some of the high-protein/low carb shakes like EAS makes (available at Walmart). Also, eat more nuts and cheese, which are higher in fat (but, if you have gallbladder problems, eating more fat certainly isn't going to help those symptoms).
