| You can always make fajitas using low carb tortillias...we do this a lot at home. I marinate the chicken/steak/shrimp, cook, add black beans, salsa, lettuce, cheese, tomatoes and onions.
Also, you can make your own tortilla chips by baking the low-carb tortillas.
Personally, I tolerate refried beans quite well, you could make a bean burrito on the low carb tortillas.
Carnitas would be blood sugar friendly as well. You should avoid the rice and the regular chips, but there are plenty of things you can have in their place.
