Is he carb counting at all Dewey? Have you tried lowering his carbs a bit to see what happens?

Thanks, Heather. You have a very good point about his eating habits & style. It could be that the way he's eating or the times at which he's eating that is causing his body to react in these ways.
Ever since he got cancer, I've tried to get him to eat better (of course when he was on chemo, he could only eat what his body was hungry for

). In the more recent past (post stem-cell transplant), I've been trying to get him onto more wholesome & organic foods, but to no real avail (unfortunately, it can sometimes be harder to buy them due to price, etc.). Still, I'm trying.
I find that he eats more carbs than he should in one sitting (most of the time). This could indeed cause an issue of not only a post meal spike, but a decline afterward - thus causing a low or low feeling.
I'll continue to keep an eye on him & definitely will give these findings to his doctor.
