I tell you what I do if Im not pressed for time and that is to remove the crust onto a stack of paper towels and let it rest for 30 mins or more. All of that oil leaves and it is firmer so you can actually pick up slices when it leaves the oven topped with goodies. Other wise I do it in a hurry and we eat it with a fork if the crust is too flexible...if that makes sense.
