My mom made this this afternoon. I would say that "fudge" it isn't, but I could see calling it a chocolate cheese cake perhaps. We used the reduced fat cheese and it looked like for the entire dish about 22 carbs. If you used the no fat cheese it would have nearly no carbs other than the chocolate at about 14. It taste good as something different.
