I just made these last night and they are SOOOOO good! They're super moist and delicious! My hubby thought they were great too!
Banana Nut Muffins
Serves: 6
Carbohydrates Per Serving: 3.5
Preparation Time: 10 minutes
Difficulty: Easy
Ingredients:
1/2 C Ground flax seed
1/4 C of Atkins Baking mix or
Baking Mix Substitute
2 T Oil or melted butter
1/3 C of Splenda
1 egg, beaten
1 t baking powder
1 1/2 t banana extract (or vanilla, hazlenut or almond) -
I used vanilla
1/2 C water
1/2 C finely chopped walnuts or almonds -
I used walnuts Cooking Instructions:
Mix all ingredients by hand.
Spray muffin pan (or line with papers), spoon batter into muffin tin.
Bake 25-30 minutes at 350 degrees
