Low Carb Bread Machine Bread

Here's another one I tried and really like! This bread is actually really light! It makes a pretty small loaf, though.

I'm copying/pasting it from the website, so the comments aren't mine (see below for my comments).


LC Bread Machine Bread

(This is taken from the Low Carb Baking Cookbook by Diana Lee available at the Low Carb Retreat.)

Note: I have made 7 loaves and 6 out of 7 turned out great. I get better rise if I use 1+1/2 pkg yeast and add 1 tsp sugar (for the yeast to eat-at 1 carb). The dough will look goey or sticky.

Toasts well and works well as sandwich bread. Loaf is about 5" x 3" and the texture is about like a light bagel.


Ingredients

(Please read it all before starting)
1/2 cup water (warm not hot-about 125F-use thermometer)
1/2 cup heavy cream
1 TBS oil
1 egg (sl beaten)
1/4 tsp salt
1 cup high gluten flour (Bob's Red Mill is low in carbs)
1/2 cup oat flour
1/2 cup vanilla whey protein powder
1 pkg rapid rise yeast (be sure it is not old)

Directions
To your bread machine add the ingredients in the order that follows. Add water, cream, oil, egg, salt, gluten flour, oat flour, whey protein powder, and yeast. Set your bread machine according to directions for Rapid Bake (2 hours).

Nutrition Information 60 carbs and 196 protein per loaf. I got 15 slices so it was 4 per slice. BTW, this did not knock me out of ketosis.

I did the same thing that this person did - I added 1 tsp sugar for the yeast, and I added extra yeast. The loaf I made was definitely lighter than a light bagel - it's very much the consistency of normal bread. I didn't use a thermometer for the water...I basically just made sure that none of my liquids were too hot or cold for the yeast. I even heated up the cream in the microwave a bit. For the flour I used wheat gluten. You probably don't have to use vanilla whey protein powder - I'm sure plain is fine too. (This is MUCH cheaper if you can find it in bulk than if you buy it in a container from a health food store.) I used regular breadmachine yeast.
