I can remember a lot of the unpredictability of my early days being put down to the honeymoon by the hospital. In fact I remember cursing my pancreas and wishing that it would just pack in so that I would get regular results.

A lot of the variability was, of course, down to me not having a clue about carbs or setting my levels in general. And I was on the cloudy stuff for basals. So how much of the weirdness was honeymoon and how much was lack of education / older insulins I really couldn't say. Come what may, I'm 13 years in now so those days are long gone...
