Rather than the hassle of having an extra insulin, it might be easier to split your Apidra shot - My SOP is 2/3 upfront and the rest after about 45 mins. I do that routinely for my evening meal and any other meal that I think will take some time to digest.

That way it makes estimating any corrections and allowing for IOB much easier.
