2 things I love and find filling:
Butterfly and flatten out some turkey breasts - 2 is ok (for me

)
put some ricotta cheese in middle with chilli's or herbs or spinach and roll it up
Wrap the whole lot in parma ham and use a couple of cocktail sticks (low fat of course

) to secure the ends
pop in oven
or
stir fries with loads of chinese or thai veg and spice's
or
curries with lots of indian spice's with some philadelphia or low fat greek yoghurt to stir in at the end
