I suspect that your pancreas is still making some insulin. Increasing the Lantus dose just means that the remaining beta cells don't have to work as hard to keep blood sugar down. More insulin can also be stored in preparation for the next glucose load. So you may find that you don't spike as high after the next meal. Ideally, you want to titrate the Lantus dose up to the point where you start having hypos. At that point, as much of your endogenous insulin as possible is being used through the phase one insulin response to cover meals. It makes achieving stable blood glucose a lot easier. Enjoy it while it lasts ....
