A good book that lists calories, fats and carbs is a good starting place, journal every bite that you put in your mouth. I mean every bite! for a month this will help you see how much you are eating. If you can not do with out the chips get the individual serving packs and just eat one pack. Also the baked chips have less fat.
Work closely with your diabetic nutrionist they can help you map out your foods. Find good substitures as above eat lots of salads when you go out and you will find yourself to full to eat a lot of pasta. If you have to eat pastas eat the whole wheat variety so you get fiber. When eating out I always choose an item with a salad no matter what else I have. The salad comes first and if I don't finish the rest so what. Also share entres with the person you are out with. It costs less and you don't need all that food any way.

Also I like to go to places that allow me to fix my own salad from a bar.
