| Sounds great! You could actually probably make oatmeal cookies from this recipe with just a few modifications. Maybe replace 1/4 cup of the Splenda with dark brown sugar and add oatmeal. It would up the carb count a bit, maybe to 3-4 carbs per cookie, depending on the size of the cookie and the size of the recipe.
2 3/4 cups of flour and two sticks of butter would make probably 3 dozen cookies, I would think, so 1/4 cup of brown sugar wouldn't be a significant amount. About 1.5 grams of carbs extra per cookie. Don't ask me about the elaborate calculations I went through in order to obtain that result. It was a struggle for this non-math person. LOLOL.
If I can find the flours, I'll have to try this!
