Don't forget you can eat vegetables at breakfast, too.
I eat all kinds of oddball things for breakfast, often left from cooking the night before. Last breakfast was stewed chicken with a small piece of carrot and of onion, seasoned with fennel and salted.
Sometimes I eat zucchini with tomatoes or a garlicky tomato sauce, with cheese on top,
or scrambled eggs or an omlet with spinach or other light vegetables.
Sometimes I'll eat sweet potato, plain, Or mashed with cinnamon. (Caution: measure your BG andkeep portions small on Sw.pot.)
A favorite is blueberries in real cream.
Ha, even tofu with broccoli is something I'd eat for breakfast. That reminds me, while I was warming breakfast this morning I was remembering the steamed pork belly I had at my friend's house. It is just another version of bacon, and I'd love to have it for breakfast.
Really, I eat anything for breakfast that I'd eat at other times of day. No problem. I do sometimes delay eating in the morning, though. But I am not working against any dawn phenomenon or injected insulin. That allows me to wake up before eating, so I feel like giving my food more consideration than if I had to just roll out of bed and swallow something quickly to get out of the house.
