sweeter from birch sap

I rarely at the adverts on here but I saw one today that rang a bell.
Yesterday in a cookery competition program on TV one of the chefs, whose 'thing' is healthy eating used a product called xylitol. There were Michelin starred chefs compeeting and his starter won the round so it can't have tasted bad.
There was an advertising link on hee about it. It apparently is 'natural' , the blurb says its metabolised without insulin, is kind to the teeth and can beused in cooking. I think I have seen it as an ingredient on sugar free chewing gum.
Has anyone tried to use it?
