He has his own recipe for lactose free milk and cream.While he may have some interesting things to say and good tips I find his personality just so grating that I switch of when he is talking. As I recall his fish course uses Ling and did not get very good comments but his other courses including desert were a real hit with the judges. His food does look great, I just can't take him at all.
