Exercise is a big help in keeping blood sugars down. My blood sugars are lower on weekends, probably because I'm no sitting behind a desk all day, i'm up and moving around and not as stressed.
Usually the higher in fat the food is, the longer it will take your numbers to spike, so you should be checking 3-4 hours after eating these foods to give you a more accurate number. As stated above, the more active you are, the less impact these things will have on your BG.
