If you gotto have potatoes, don't look for cauliflower to taste like it. We need to give up on the notion it's has to taste like something else. Those low fat foods are really bad for us because someone tried to make it like the other one.
Think of it like mates, you may have loved and lost, and you want to love the new one but why does it have to be the same?
Cauliflower will make a good new taste to replace potatoes.
I've never gotten the cauliflower smooth as potatoes but then again I don't ad a lot of fat. I want to get to like the leaner flavor and texture. Think of switching from regular milk to 1%, yeah it more watery, but after a few months, the regular milk tastes like cream.
Waxy potatoes are the only potatoes we should attempt to eat. Russets are now poison. I've had good results with waxy if I keep portion size in mind.
