A great substitute for New Potatoes (you know the small reddish colored ones) that few people know about is boiled radishes. Just boil radishes until tender and serve with butter (or margarine if you prefer), and spice to taste. They look and taste amazingly like New Potatoes with out the high starch.

You can also make potato sticks from radishes by frying radish sticks in the oil of you choice. The longer you cook them the softer they get, so if you like them crisp you have to fry them quickly.
