Test as much as you need to, in order to feel comfortable. You only find out how your body reacts to food when you test. As for the reason your sugar level spiked, do you know of the glycemic index? Some foods have a high GI and others don't. Try picking foods with a low GI which means the energy released (the carbs) is done slowly, therefore resulting in you feeling fuller for longer, not having a spike in your blood sugar levels and not feeling **** when they drop again afterwards.
