Quick and easy salmon recipe
For each person:
salmon fillet/pave
1 shallot sliced
1 /2 medium mushroom sliced( field mushrooms are even better- number depending on size,)
3 sprigs thyme per (1 left whole, 2 with leaves stripped from stalk)
bayleaf
olive oil + (optional) knob of butter for cooking.
Sheet Baking parchment
salt
pepper

Heat oil and butter if used
saute shallots for minute or so then add mushrooms mushrooms and thyme leaves. Cook until softened
Divide half the mixtute between the sheets of baking parchment
place fish on top, season
place other half of mixture on top with thyme sprig and bay leaf.
Fold paper over to make a parcel
Cook in preheated oven (190C) for 10/15 minutes depending on size of fish and how well you like salmon cooked.

Cooking in parcels is infinitely variable and works really well for fish.
