| Funny coincidence, I made Salmon Patties for our lunch today.
Here's my basic southern recipe.
2 cans of skinless, boneless salmon (the size of tuna cans)
1 egg
small amount of diced green pepper (about a tablespoon i'd say)
1 tbsp minced onions, hydrated
1/2 tsp minced garlic
lemon pepper seasoning to taste
1/4 c. cornmeal
Mix together well and form patties, sprinkling a little meal onto a plate to coat pattie. Fry skillet using with 1/2 olive oil, 1/2 canola oil, turning once (I don't deep fry them, just enough oil to coat the bottom of the pan)
This makes about 8 small patties or 4 large ones.
These don't seem to bother my blood sugar. I usually make a salad and some green beans to go with them.
