Walking helped me a lot at first, but it's too dark to walk in the morning and when I get home at night, so I use an elliptical machine. That works really well, especially right after dinner if I've eaten more carbs than I should. It helps bring things down pretty fast.

I have been using Nature's Own double fiber bread -- in moderation -- and that doesn't seem to spike my bg levels too much.
