Here's one suggestion: prepare a breakfast burrito in advance.
My wife makes about a weeks breakfast burritos in advance for the 2 of us. Each week is different so they don't get boring. Last week was churiso, potato, and egg. The current batch is an off brand of spicy Cajun Bacon chunks yes chunks, not strips, small spiced potato cubes, and a little bit of eggs, in a flower wrap. No idea of the nutrition content, but they are OOOhhhh so good and don't mess with me.
