Here is a recipe for a low carb cream cheese pancake:

2 ounces cream cheese
2 eggs
dash of vanilla essence
splenda or other sweetener

Soften the cream cheese and add the eggs one at a time beating well, add essence and sweetener. Put a knob of butter into a frying pan (think you call it a skillet?) and fry the batter - should make three good size pancakes and they don't stick to the pan. Serve with some carb free syrup or whatever your choice of topping.

These also make excellent roll-ups if you take out the essence and sweetener and add a little salt. Can be filled with all sorts of savoury fillings like spicy ground beef etc.

Total carbs will depend on the cream cheese used but should be no more than 2g carbs for the lot.


You can top these with any berries. I like blackberries and rasberries mixed, simered down to a sauce topping. Best to put frozen berries in a bowl mixed with favorite sweetner overnight. I add some Devinci Sugar Free Vanilla Syrup before I cook them the next morning. If rushed I cook in the microwave. The blackberries release a lot of juice, where as the rasberries do not. When I have more time I simmer them for awhile until the mixture thickens some.
