Leftover supper?

Sometimes I make extra at lunch or supper and eat it breakfast, reheated in the microwave- would this work for you? I follow a regimen that suggests eating most calories and carbs in the early part of the day and easing down by supper... prepare for that by making enough that breakfast is the biggest serving.

Oh and eggs with chopped red peppers will keep bg at bay, too...
