Thumbs up Experimenting with the Arnold's Sandwich Thins

I'm living dangerously here, Jeremy.

I took the top half of one of the multi-grain Sandwich Thins, toasted it, and slathered it with Omega-3 Crunchy Peanut Butter yesterday for my first meal of the day. My very first peanut butter toast since dx...my favorite breakfast meal in the past.

Although that was technically breakfast, it was also nearly noon when I ate it. Slept in 'til almost 11. Since I'm v-e-r-y carb sensitive in the AM, I had no idea how my BG would respond to this...but I usually have breakfast much earlier - about 7 AM.

Anyway, here are my results:

BG upon eating (FBG): 102
BG at 90 min. pp: 126
BG at 2 hrs pp: 114
BG by 2 hrs, 30 min pp: 100

I'm certain the peanut butter had much to do with how I responded to the bread. Acceptable results, but not for every day.

I'll have to try it again, but much earlier to determine if it's a viable breakfast alternative on a work day or just a weekend breakfast treat.
