I agree...sometimes there's not really an explanation for why things are as they are. It's just one of those Diabetes Mysteries

. I would continue to test frequently and log your readings carefully, including what you've been eating and your activity at each time period. If you notice a pattern, call your doctor and see if your insulin can be adjusted. Btw, is it possible that you've lost weight? I know you have been being more careful with what you've been eating and if you've lost weight, you could be more sensitive to the insulin. I don't know, just a thought.
Anyway...I wouldn't worry about it too much, but like it was mentioned, continue to be extra observant of your readings.
