I'd say just eat balanced meals as much as possible. I don't think you have to dramatically cut carbs or cut out any food group, but try to make sensible choices. Then, of course, do your best to cover your food choices with insulin as needed.
You might want to pick up a quick and easy cook book or possibly set up an appointment with a dietician. A cook book can give you easy recipes and a dietician can also give you advice, suggestions, and ideas for your meal planning.
