Mushrooms won't affect your blood glucose much. 100grams of white mushrooms contains only 3 grams of carbo, 1 of which is fibre anyway. Cheese won't affect your blood glucose much either. It is mostly protein and fat. 100 grams of edam cheese contains 25 grams of protein and 18 grams of fat. But, as they say in the classics, the proof of the pudding is in the eating. Eat some cheese and test your blood sugar to see what happens. Don't eat too much, though. Filling your stomach with
anything bumps up the blood sugar. My favorite snack is peanuts. They are 50% fat, 25% protein and 15% carbs. But they don't affect my blood sugar at all.
