Soy flour uses?

Saw at the grocery store that 1/4c regular wheat flour has 22g carb with no fiber while 1/4c soy flour has 10g carb with 4g fiber and 16g protein. Since it lacks gluten soy flour is not a substitute for wheat flour in baked goods but is usually substituted for some of the wheat flour in recipes. I do not eat wheat flour. Can soy flour be used as breading for fried foods? Can it be used to thicken sauces or gravies? Just how can it be used?
