Question Hmmmmm.

I am still testing what i can and what i can't eat 6 months after type 2 diagnosis. Thing I can't figure out is I can eat 2 or 3 heaping plates of spaghettie smothered in sauce and it doesn't affect my blood surgar. And pizza, I can eat a **** load of slices and still nothin bad, we're talkin pizza hut. When I say doesn't affect it I mean my surgar level only goes up like 10 points. Oh and one more thing If my surgar is reading kinda high like, 220 It'll tick me off, wich is easy to do, and it's sometimes like that when my stomache is empty and I'm hungry as heck, I'll down a can of pepsi and go for a short walk, well sometimes for a walk, and my surgar level will drop to like 113. can anyone explain this please. And I check my surgar at least 3 times a day. Oh yea in case ya'll are wondering I don't eat like that everyday. Like this morning I had 1 can of chicken noodle soup without crackers. Crackers do raise my surgar level Very Very high almost 260. That would be a half a pack of crackers because 2 or 3 crackers in soup is rediculous. It's all or none.

Each of us react to food differently. Some people can handle pizza well (like yourself) and other can't. You have to test a lot in order to figure out which foods you can handle better.

Also, it may be beneficial to see a dietician.

I can eat chicken fettucini alfredo from a restaurant will rolls and a salad and my BG will usually bottom out after a an hour or so. Doesn't do that with spaghetti though. Always thought that was very strange.

Regarding your Pepsi BS problem:

Pepsi contains high fructose fructose corn syrup (I presume) which is 55% fructose and 45% glucose. The fructose is converted to triglycerides by the liver and moved into the blood where it may remain for a while or be stored as fat. This process may cause a short term spike in insulin sensitivity which allows the insulin to properly handle the glucose by storing it as fat or glycogen thus lowering the Blood glucose.

This explains it, but that does not make my analysis true. Just my idea.

You mention that pizza and spaghetti don't cause your blood sugar to rise...are you checking 2 hrs after the first bite of these foods? If so, you might also want to do a 3 hr check, as sometimes these foods will "hit" a little later than the 2 hr mark.

Exercise is a big help in keeping blood sugars down. My blood sugars are lower on weekends, probably because I'm no sitting behind a desk all day, i'm up and moving around and not as stressed.

Usually the higher in fat the food is, the longer it will take your numbers to spike, so you should be checking 3-4 hours after eating these foods to give you a more accurate number. As stated above, the more active you are, the less impact these things will have on your BG.
