I use this recipe that was posted on the Atkins forums.

Fake Mashed Potatoes:
  • 1 cooked head of cauliflower (drained and mashed- you have to get as much liquid out as humanly possible in order for it not to turn into soup! I press mine in a fine strainer with a spoon to get as much water out as I can. I also pat with paper towels)
  • 1/8 c. of heavy whipping cream (do this to texture-add a little at a time)
  • 4oz. of cream cheese (softened)
  • salt/pepper
  • (optional, but recommended: shredded parmesan cheese)

Combine cauliflower, and cream cheese, and a little cream and mix with a mixer. Add more cream to texture and add salt and pepper, plus the optional Parmesan cheese, about 1/2cup. Mix until well blended. Put in a casserole dish and sprinkle as much Parmesan on the top as you like. Bake at 350 until top is golden brown.

I also use Linda's Low Carb Menus... great site. There is a recipe there for hash browns using cauliflower instead of potatoes.

If you gotto have potatoes, don't look for cauliflower to taste like it. We need to give up on the notion it's has to taste like something else. Those low fat foods are really bad for us because someone tried to make it like the other one.
Think of it like mates, you may have loved and lost, and you want to love the new one but why does it have to be the same?
Cauliflower will make a good new taste to replace potatoes.
I've never gotten the cauliflower smooth as potatoes but then again I don't ad a lot of fat. I want to get to like the leaner flavor and texture. Think of switching from regular milk to 1%, yeah it more watery, but after a few months, the regular milk tastes like cream.
Waxy potatoes are the only potatoes we should attempt to eat. Russets are now poison. I've had good results with waxy if I keep portion size in mind.

A great substitute for New Potatoes (you know the small reddish colored ones) that few people know about is boiled radishes. Just boil radishes until tender and serve with butter (or margarine if you prefer), and spice to taste. They look and taste amazingly like New Potatoes with out the high starch.

You can also make potato sticks from radishes by frying radish sticks in the oil of you choice. The longer you cook them the softer they get, so if you like them crisp you have to fry them quickly.

I've been experimenting again w/carbs like bread and potatoes and they are NOT working well for me (post-prandial). I love sweet potatoes (natural w/nothing added), but haven't tried in a while.

Actually I like cauliflower, unmashed, smothered in cheese sauce even more than potatoes. that is one of my favorite dishes.

Another lover of cauliflower - especially raw.

I have found that new, red potatoes work better for me than any other kind. As in all things diabetic, though, YMMV.

I am actually trying a new recipes tonight for turnip fries (baked, despite the name). I'll let you know how they turn out!

- HBA1C as close to 7.0 as possible by next test in August...DONE! HBA1C 6.2 as of 8/12/08
- HBA1C down to 6.0 within 6 months after that (so, February, I guess)
- get off all diabetes medications in 3 years or less...Revised: have DS surgery to cure diabetes in 2009

heh, well...I burned them Some cook I am! I think I cut them too thin. The couple without charred black sides were good, though. Good enough that I will try them again sometime. I just cut up the turnips, put in a container with some canola oil, paprika, and salt substitute, covered and shook the container to coat evenly, then put on a cookie sheet and baked at 425 for 12 minutes, flipped, then 12 more minutes.
