Fresh Veggies?

Okay, I am doing really well on a low, low carb diet with my Type 2. I eat lots of cauliflower, broccoli and lettuce. Before I spend my hard earned money, can anyone tell me if cucumbers, peppers, tomatoes, zucchini and onions will be safe in not raising my numbers?

I'm not a fan of tomatoes, but I eat lots of cucumbers, zucchini and peppers w/o problems. I use onions in cooking as well with no problem, though I don't care for raw ones.

11/06: 6.2.
03/07: 5.3
06/07: 5.4
10/07: 5.3
05/08: 6.2 (after dealing with shingles & bronchiti)
2/09: 5.5

Once you have had some time on the low carb thing, you can add in some of the carb type vegetables but not the high carb ones. Using some fat and protein to your "salad" will help with the numbers.
Varieties of a vegetable is important, some have more starch or sugar than others. I heard but not tested that Vidalia onions actually have less sugar in them so would be easier on your system

All vegetables contain carbohydrates. Get a copy of one of the popular books:
1. Dr. Atkins Diet Revolution
2. Dr. Bernstein's Diabetes Solutions
3. Protein Power
All these books contain a run down of the relative carb content of vegetables and appropriate amounts to include in the diet. Every self respecting diabetic should have all three books. Then if you want to go to Diabetics Diet Graduate School you read "Good Calorie Bad Calorie" by Taubes. This is a pretty tough book to digest and understand but if you do study it properly, you will be down right cocky discussing diet even with doctors.

Also, spinach is a great food with very few carbs. I eat it in omelets, as a salad, or fresh steamed.

Doug, I am so glad I read the books by Bernstein and Taubes.

Dr. Bernstein does recommend that onions be used sparingly, as they are relatively high-carb, and that we watch consumption of tomatoes, as well. Since YMMV, however, let your meter be your guide.
