Bummer - Jerusalem Artichokes!

So today I bought a pile of beautiful Jerusalem artichokes, adorably called topinambours here, and was planning a dish for tonight. I just happened to check their carb level, thinking that they would turn out to be more or less like a radish, negligible in carbs.

Holy cr*p, they have 26 gms of carbs per cup! That's only half the carbs of potatoes, true, but 12 times the carbs of cauliflower. I am so bummed! Be warned.

weird, i always thought artichokes were really high in fiber. ahhhh, now i see. jerusalem artichokes aren't artichokes they're tubers.
