      I don't add chicken broth, but I do add cream cheese.
      Can't tell you how often I get the "munchies" at home and end up eating some of this that I've got in the fridge!!! (and THAT is the trick. THIS is what's in my fridge. It's yummy AND it isn't going to raise my blood sugar. And I can't be tempted by what isn't there...)

      I know a lot of people add the cream cheese, but I have never been a fan of C.C. (except in low carb cheese cake....go figure).

      There's also the option of adding sour cream....
      (OK. True confession. I add butter, cream cheese AND sour cream. )


      I think the cream cheese helps it get a better "mashed potato" consistency -- without it, I find the mashed version a little too thin/runny, so I just steam, add butter and salt, and don't bother mashing!

      I add chicken stock and parmesan cheese, and a little garlic powder - makes it like garlic mashed - I have been eating this before I ever knew I had the Big D

      I've just found out how many uses there are for Parmesan cheese, and on cauliflower it's very tasty and satisfying.

      Just FYI, it might not have anything to do with BG

      There is a disease called Meniere's ( associated with hearing loss) that is characterized by bouts of diziness, sometime so severe you have to lie on the floor and puke

      Might want to check with the doc on this matter

      The other thing of note is diziness comes in spells of finite duration.. once you get to know the signs of onset and the like you learn to sit down, or pull over to the side if you're in a car, until the spell passes

      Magnesium deficiency can cause most if not all of the symptoms you describe (racing heart, panic, dizzyness, etc.) I've been re-reading Dr. Carolyn Dean's "Miracle of Magnesium" and most of us are deficient. Deficiency can also cause, muscle aches, joint pain, confusion and high blood pressure to name a few.

      I hope you get blood glucose control soon, you might want to google magnesium deficiency and discover how much to take, what kind, and with what (vit. d, calcium). If you can, get the book from your library, it is amazing.
