| You say you are border line diabetic, have you been diagnosed as pre-diabetic or borderline pre-diabetic?
As Pscho said, after a feed of carbs like that, check 2,3 even 4 hours later to see a spike. I presonally don't see a problem (in fact I like being in the 80's before a meal, if I'm below 70 (around 66) I will only correct if I'm not about to eat a meal.
In order to learn more about yourself, you need to step up testing. Test each morning and then before and two hours after each first bite of a meal. I'm a full blown T2 and my targets are to be below 110 first thing in the morning (fasting) and below 140 two hours after first bite.
In relation to your numbers being higher when you see your Doctor, that could be due to the stress of going to the doctor. Do you eat before seeing the Doctor, what time of day do you see him, do you walk, drive or use transport to get to his office?
I'd suggest that you test more ferquently and log both your readings and what you eat so that you see how food effects you. When eating something like pasta (which I avoid) try testing 2-3 hours after first bite as for some people the spike comes later with pasta.
