nordgirl"And I'll just finish this long posting by telling you that my husband wants to eat meat in Paris, so I'll be applying all the high fat low carb things I've learned on this forum, as in he should have meat and veggies/salad but no bread or potatoes right? I also don't him to have high fat sauces because he's worked so hard to get the weight off. Does that sound alright? It sounds a bit Paleo."

i am sorry but this sounds horrible...like living with the food police!!! and on vacation too!!!! i think it is wonderful you love your husband and want to help him...but this is his disease and ultimately he needs to manage it....i also would be so very angry to have some one i love and trust posting my personal health and weight issues on a public forum...including pictures of me....without me being there is give my consent....this has taken away his right to privacy...you can make whatever food choices you want for yourself...it is up to him if he wants to have a high fat sauce or not in paris or any where else...support yes control no...regardless have a fabulous time!

anyone who eats oysters in not vegan or vegetarian, IMO, I say this as a former lacto ovo vegetarian, who got so fed up of Asian restaurants listing fish based meals as vegetarian. It confuses the issue.

If your Hubby wants to eat meat, good for him. It is , after all a vacation. BTW, falafels spike me. (even without the pita) Nothing wrong with a bit of sauce now & then,.

You husband's health isn't a 1-2 year experiment, nor is is a lable-- it's about a LIFESTYLE that is flexible enough to keep him both healthy AND happy.

No bread? Well... heck. It's not the BEST thing for him, but I bet he can eat a small slice with a lot of butter and a big low-carb meal.
Sauces? Sure? Worried about him starting to gain weight back? Walk further.
      It's VACATION
His health isn't a 1-2 year experiment, nor does it matter in the least what you CALL it -- just help him find a LIFESTYLE that is flexible enough to keep him both healthy AND happy.

(and go ahead and eat the oysters. you'll have a better vacation!)

(just don't eat anything that looks like an oyster at Subway...)

My husband is a type 2 who lost 45 pounds on a low-fat vegan diet. He is enjoying good health and hoping that his new lifestyle will eventually result in an increase in his insulin sensitivity.

I think a lot of the people here following a high fat/low carb diet are really missing out on tofu, it's relatively high in fat and so versatile, and completely non-spiking. You could sub it for meat once a week. Some people say 'oh it has no flavor' but seriously, neither does meat, unless its been seasoned and cooked properly. Here's a nice recipe to try Colorful Tofu Salad with Basil and Cashews | recipe from FatFree Vegan Kitchen or maybe Pistachio Crusted Tofu | recipe from FatFree Vegan Kitchen.

Thanks for the link to the nutritional yeast. I am looking for something to put a bit of tang into my food. I am curious enough to go get it and try it. As far as Tofu, I don't think it would be bad to eat other than I try to stay away from soy as much as possible. I do eat the sharitaki (tofu noodles) from time to time though.

It is strange how we see food differently. I can not eat oysters as here, they are still alive when they serve them, & I cannot ( refuse) to eat live shellfish. I also would refuse any foie gras, due to the way they treat the geese & force feed them fats etc. But I do eat meats/eggs from local, ethical & humane farms. I try & get the Kerrygold butter & cheeses as I know those cows are grass fed ( my sister lives in Kerry & I can see the cows out the window.)
I know which way is best for me.

Actually if yo uavoid soy for health reasons, you might want to limit to avoiding unfermented soy. There is supposed to be evidence out there that fermented soy is okay.

Speaking of which, have you tried TEMPEH? It is a fermented soy product that is meatier in texture than tofu, and delicious!

Asian vegetarians do sometimes include fish and seafood as vegetarian. In fact, Bengalis refer to seafoods as "fruit of the sea," in order to justify themselves.

I just read about Tempeh last night when I saw it in a recipe. Looks interesting. Reminded me of Headcheese...LOL...I love headcheese dipped in vinegar.

Funny seeing this...I tried Tempeh for the first time tonight. Went to a place called The Root cafe and had their portuguese black bean soup, which was fantastic and then I had a grilled, tempeh sandwich that had spinach, tomato, pesto and a spicy chipotle type of sauce. OMG....was one of the best meals I've ever had. I'm loving how many flavors I'm experiencing eating this way. Now to learn how to make this stuff myself.
