Low carb and Passover.

For those who celebrate passover and are on low carb diets, what will you be eating during Passover?

Everything is made from matzo and the carbs are very high.

Have a happy Passover.

I don't celebrate Passover but would like to say Happy Passover (hope that's appropriate) to those who do.

My fiance's family have a rousing seder with LOTS of good things I can eat as well those high carb dishes I cannot. I'll have a little of the bad & a lot of the good. With over 40 people, someone will be happy to have what I can't.

They make low carb Passover food. Passover food is OK for the first 4 days then it gets a little trying. This will be the first time I have actually been on a strict diabetic diet during Passover.

The past 4 years I have been able to get by without being to strict with my diet, hey the pills were working great. I guess I screwed that one up. I was taking 1 mg of Amaryl a day and was getting A1C’s in the 5s and 6s. Now I have take 6 mgs per day and 100 mg’s Januvia.

At least I was able to get rid of a lot of stuff I shouldn't be eating, the prep for Passover is like spring cleaning but the object is to find all the bread in the house and get rid of it or lock it a way.

It is a tough one. We are Sephardic and we are allowed to eat rice and corn, which adds more carbs. Our seders are always overloaded with all kinds of food. I will just have to pick the lowesdt carb food we have.
For the rest of the week, we
will try to stick with low carb veggies and fish. Limit the matzo.
Anyway, Happy Passover to those who celebrate it.

Well, as least you're not a vegetarian on top of it (like I am). Sounds like you can have gefilte fish, chicken soup (minus the you-know-whats), meat, vegetables. You'll need to stay away from matzoh (oh darn) and all of the desserts. Watch the wine, too.

BTW, as a diabetic, you qualify for not having to observe.
