Two hours is standard. Mark down how long in the log so Dr. can interpret correctly.

Sounds fine to me. There's more than enough for you and child IMO. But I'm a guy. Eat more protein and veggies. Drink lots of water.

No. You should count carbs in all your foods. There's some online carb libraries. Just google "apple carbs".

I'd be happy with under 8 mmol/l anything over 10 mmol/l is pushing it, for the 2 hour mark. Raise that by about 2 for the one hour mark. Others will think these are a bit high, but I don't know what targets are gor gest. Ask your doctor.
