View Full Version : How can I still enjoy my fav pasta sauce?

I make my own pasta sauce...fresh veggies, garlic and basil. It's heaven on a spoon, but since being dx'd I haven't had it because I'm trying to stay away from pasta.

What else besides bread and pasta can I still enjoy my sauce with? Any ideas at all will be welcome!!

I keep frozen boneless chicken breasts on hand. Bake one, top with your Sauce and some Parm cheese sprinkles . . . :dontknow:

Then test, test, test.

I have pasta when my family does. I plan on it, so that I don't have any other high carb foods that day. I also make sure I have a very small serving, and I add many extra veggies to it, my favorite being green beans amd carrots. I haven't found anything else to substitute for the pasta though.

There are some "low carb" pastas on the market. Some taste better than others. There also is soy pasta, personally I don't care for it.

Instead of "low carb" pasta, I'll put sauce over steamed veggies(zucchini especially) I've also put it over a couple of slices of polenta.

Perhaps over steamed cauliflower, with a sprinkle of cheese?

Thanks all of you! Zucchini is a fav of mine as is polenta. I could go for a small amount of pasta but it's soooooo hard to stop once I start.

How about Eggplant Parmesean (to go along with Chicken or Veal)... There's also Spaghetti Squash, as well. Or you could also use in on pita pizzas... And then you could do Stuffed Peppers (made with mostly meat & a little rice)... Happy Eating! :eating:

Mozzarella cheese gets stringy when you add it to a bowl of sauce. I've tried that with sauce alone a few times...

I eat pasta, but watch the portion size. also al dente is much better for you than over cooked.

You can have your delicious pasta sauce with... bean sprouts! Instead of spaghetti. I love it. This is a very old recipe from Weight Watchers. A friend of mine suggested that years ago and frankly it's very good, I love it. Bean sprouts must be fresh, and crunchy.

Or you can have your pasta, eat less of it, and have it for lunch instead of supper? :)

1) Trim fat off of a sirloin strip steak, pound it down a little to flatten .... rub with salt/pepper/garlic to your taste.

2) Pan fry steak in olive oil, browning both sides .... add a tomato-based homemade sauce ... simmer covered for about 20 minutes.

3) Optionally melt some shedded mozzarella over steak at the end.

I just want to second the pita pizza suggestion. You could also use a low carb tortilla for a really thin crust pizza. You could also be brave and try those almost zero carb shiritaki (?) tofu noodles. I keep meaning to try them but haven't worked up the courage to yet.

I tried them. Won't try them again. I like tofu, but I didn't like the noodles. It was the consistency.

is pasta a bad thing? I've been told so far that i should eat pasta's and potato's etc because they're high in carbs... i am type 1 so would this make a different in diet compared to someone who's type 2?

While it is easier for a Type 1 to have a lot of carbs like pasta & bread, you still have to cover it with insulin. Eating a huge amount of carbs and taking a lot of insulin can lead to weight gain, and the more insulin you take the more chances you have of making mistakes - take too much and go low, don't take enough and go high. I do moderate carbs. I will measure out one serving of pasta, which is 2 ounces dry and makes about 1 cup when cooked. It's not a lot and if you go to a restaurant you probably get 3 or more servings in a meal. One serving of regular pasta is about 200 calories and 42g of carb so it really adds up.

There's no reason to eat a lot of carbs unless you're on a very basic, set insulin regime and have to worry about peaks. How many injections are you taking each day and what types of insulin? Do you know how to carb count and do you have an insulin:carb ratio?
