Does anyone know the carb count for avocado? I looked on the site I use and could not find it listed. My granddaughter asked me to buy some, and then went away for a couple of days. I have two that I think are ready to eat now. I have only had them in dips. She says she likes to eat them with a spoon. If they are something low carb, how do I fix them, so I can eat them?:eating:

Penny, avocados have about 8gm carbs/3 oz. A whole avocado probably is 15gm. If the skin is black/dark brown they are ripe. Just peel them and eat. They're really good mashed with garlic and some pepper. Use it as a spread on crackers. They are high in fat. Happy eating

I've always considered avocados a nearly free food. Most the carbs are fiber, which do not contribute to bg. Check out www.calorieking.com or www.nutrition.com for more food nutrition values.

Granddaughter called and said KISS(Keep it simple stupid), Mamaw. I am always telling her that.:biggrin: I sprayed one of the avocados with spray margerine, added a bit of salt and pepper and (per Emily's advice) ate it with a spoon. It was very good and so far have had no BS spike. Could not get Hubby to try it, so guess I will have another tomorrow. It's a nice chance for my boring menu.

I make this for my family and they really enjoy it. Usually it is a treat. As an 'entrée' or when the kids have their hungry friends over. It is quite high in carbs if you consider you will eat this with tortilla chips. I always try to limit myself.
I call this a 'Mexican Spiral' ...
With or without meat. Both are excellent.
I cook minced beef or minced chicken and add taco seasonnings. I let the meat cool down a bit. I add (rinced) red kidney beans to the meat.
On a huge plate I'll spread a thin layer of meat and leave about 1.5 inch from the edge.
My second (thin) layer will be mature (grated) cheddar cheese. Make the layer smaller than your meat layer.
Then I add the veggies :)
All your layers must be smaller than the one before for the best visual effect.
Next layer is diced tomatoes. Don't forget a bit of salt and lots of freshly ground pepper!!
Next layer is chopped green onions.
Next one is finely diced yellow or green peppers.
A dab of sour cream. Sprinkle with a bit of cayenne pepper if you want.
Now that 1.5 inch you left all around the plate... it needs to be filled :)
I slice stuffed green olives...
...and I dice a big ripe AVOCADO, add a bit of fresh lemon juice (so it won't turn ugly and brown)...
Put the diced avocado and the sliced olives all around your 'spiral'. Make it look nice!
To finish... salsa! I make a big X over my 'spiral' with salsa. You may use spicy salsa or mild salsa. I usually use both!
Voilà!
The idea is to dig in with your tortilla chips... Often I'll put some of the spiral in a little plate and eat it with a fork, thus avoiding the tortilla chips.
If you don't want meat you simply go ahead with all the other layers. Simple!
NOTE: I sometimes make it in advance but hold the sour cream and salsa until you are ready to serve the spiral. The sour cream and salsa will mix and your spiral won't be as good looking as you would want it to be.
